Cockles move with a powerful muscular foot. They’ve even been witnessed springing with this strong foot on the bottom of the ocean floor.
Because Cockles are small, they cook quickly when grilling, poaching or sautéing them. We also like them as an alternative to clams over pasta, sautéed in olive oil and garlic, with a splash of white wine and freshly chopped parsley as a finish.
