Bled Fluke are immediately removed of their blood by the use of pressure. The result is a “sushi grade” fluke with a paper white, firm flesh and delicate flake that is ultra-mild in flavor. If you like top quality Dover Sole, this is for you.

Bled Fluke is sushi grade, so be sure to include it with your favorite sushi offerings. Of course, you may also poach, bake, broil, sauté or fry it, but be sure to use very subtle spices, herbs and sauces for the mild flavor of the fish to shine through.
