Fun Fact

The Wellfleet oyster beds in Cape Cod became depleted in the late 1700s and early 1800s. Smart locals placed a small quantity of oysters from the Chesapeake Bay area in local estuaries as seed stock. As anticipated, oysters once again flourished in the waters of Cape Cod!

Wellfleets are perfect at cocktail time, on the half shell with a refreshing squirt of lemon and perhaps a creamy horseradish sauce. You may also grill them, or stuff them with a rich Rockefeller dressing of spinach sautéed in butter, shallots and wine.
