Salt Cod - Baccala, Wild, Canada, Fillets (3lb avg)
Salt Cod is preserved by drying and salting the fresh fish for a period of time. It is more intensely flavored than fresh Cod, but retains its deliciously firm, large white flakes. If you’re looking for something unique, this is it!
Region & Fishery
Salt Cod has been consumed for over 500 years. In fact, it played an important role in international commerce between the New World and Europe, forming one leg of the so-called “Triangular Trade.”
Soak Salt Cod in cold water for one to three days, changing the water two to three times a day. Then simmer it directly in sauces, batter and fry it, or boil it and prepare it as a salad with garlic, celery, olive oil and lemon.
Salt Cod is high in protein and Vitamins A, C, B6 and B12, and is a good source of Omega-3.
