Dover Sole are long and elliptical with darkish skin. They are world-renowned in the culinary world for their exceedingly delicious flavor – white, mild and sweet with a nice flake. You’ll find them similar to their cousin the Flounder, but more delicate in flavor.

Dover Sole get their name from the town of Dover, which historically supplied the greatest number of these fish to the main London fish market.
Remove the tough skin of your Dover Sole, then poach, steam, grill, broil, sauté or bake it whole. You may also fillet it and gently pan-fry or sauté. Although the flavor is delicate, it’s very well suited to buttery-rich sauces.
Dover Sole is packed with protein, Niacin, Vitamins B12 and D, Phosphorus, Potassium and Magnesium. It’s also a nice source of Omega-3 fatty acids.
