The Skate is an odd-looking fish, sporting wings, like Rays. The wings have a gelatin-rich meat which is firm and pronounced in flavor, very much like Crab and Scallops.

Skates are oviparous, that is they lay eggs. Their fertilized eggs are laid in a protective hard case called a “mermaid's purse.”
Soak Skate fillets in lemon water. Then you may bake, pan fry, deep fry, poach or sauté them with any number of strong-flavored spices, rubs and marinades.
Skate is good for you nutritionally, with excellent amounts of Vitamins B6 and B12, Niacin and Phosphorus.
