Smelt - Small, Fresh, Wild, Canada, Whole
Smelts resemble very tiny Salmon, with the exception of their silvery-green color. Their flesh is rich in oil, delicate and finely flaked with an extremely mild flavor. They’re perfect for those who prefer a sweet, white fish.
Region & Fishery
The Smelt is an inshore fish, confined to so narrow a zone along the coast that none has ever been reported more than a mile or so out from land.
These smaller Smelts fry up like potato chips! Simply coat them in seasoned flour and deep-fry until crispy-golden. You may also broil them covered in breadcrumb seasoned with fresh mint, parsley and garlic and a drizzling of olive oil.
Tiny Smelts provide a large source of Calcium, Phosphorus, and Potassium, Vitamin D and B Vitamins, and Omega-3 fatty acids.
