The Smelt is an inshore fish, confined to so narrow a zone along the coast that none has ever been reported more than a mile or so out from land.

Product Preparation

These smaller Smelts fry up like potato chips! Simply coat them in seasoned flour and deep-fry until crispy-golden. You may also broil them covered in breadcrumb seasoned with fresh mint, parsley and garlic and a drizzling of olive oil.
