Smelts are small, silvery-green fish that resemble very tiny Salmon. Their delicate flesh is finely flaked and is rich in oil and mild flavored. Although this selection is frozen, they cook up nicely!

The Smelt is anadromous, meaning that it migrates from its saltwater habitat to spawn in fresh water. They get their name from the Anglo-Saxon word meaning “shiny.”
Defrost Smelt in the fridge overnight. We like to coat them in seasoned flour and quickly fry them until crispy. You may also sauté them, as well as bake or broil them covered in breadcrumb seasoned with fresh mint and lots of garlic.
Smelt are very healthy! They contain Calcium, Phosphorus, and Potassium, Vitamin D and B Vitamins and are high in Omega-3 fatty acids.
